Description Job Description: The employee should work with a knife in the dominant hand. Work should be done with a hydrolic cutter to remove the leg. The work will be done at an elevated station while the cows are moving in the main chain. Work Procedure: Place the two knives in the sterilizer Make sure the knife sterilizer and leg cutter sterilizer are at the correct temperature Notify your supervisor if the sterilizer is not at 180 degrees Secure your harness to the safety cord Stop the cow with your left hand and make a cut in the rectal part away from the thigh Sharpen the knife with steel and place the knife in the sterilizer Alternate knives between each animal After you finish cutting the rectal part, turn the cow over with your hand to access the legs Use the paw cutter to put the paws between the blades Use both hands to activate the two switches at the same time on the leg cutter to remove the legs Ensure that the legs fall into the hopper so that the legs can be saved The leg cutter has to be sterilized between each animal Do not sharpen the blades of the cutter Only trained employees can sharpen the blades Other additional activities to be assigned
